Soupe à la Turque

Ingredients
- shin of beef
- vegetables
- spices
- pepper
- salt
- 2 quarts soup (the stewed mixture)
- 0.25 pound rice
- 2 egg yolks
Instructions
- Make a good gravy from shin of beef. Cut up very small various sorts of vegetables of whatever may be in season and add to the gravy along with spices, pepper, and salt. Stew everything well down together, then set aside to cool and skim off the fat. Return the soup to the fire to boil, and add one quarter of a pound of rice to every two quarts of soup. Beat two egg yolks with a little of the stock, and when the rice is quite tender, stir the beaten yolks into the soup. Take care not to let the soup boil once the eggs are added, and stir always in the same direction.
