French Roll Fritters

Instructions

  1. Remove the crust from a long round French roll and cut the crumb into thin slices. Soak the bread slices in boiling milk, taking care they do not break.
  2. Beat several eggs in a dish. Using a fish slice, carefully remove the soaked bread from the milk, letting the excess milk drain off. Dip each piece into the beaten egg, then half-fry them in fine salad oil until they are partly cooked.
  3. Soak the partially fried pieces again in the milk and dip them once more in the egg. Return them to the oil and fry until they reach a handsome light brown color.
  4. While the fritters are still hot, pour over them a clarified sugar that has been flavored with cinnamon and orange flower water.
