Baked Haddock

Instructions

  1. Carefully clean a fresh haddock. Fill it with fine forcemeat and sew it closed securely.
  2. Dredge the fish with flour and pour warmed butter over it. Sprinkle with pepper and salt.
  3. Set it to bake in a Dutch oven before the fire. Baste frequently with warmed butter mixed with capers. Dredge with flour two or three times during cooking.
  4. Bake until the fish is a rich dark brown. The continual bastings will produce sufficient sauce to serve with it without any other being added.
