Duck Chop Suey

Ingredients

Instructions

  1. Carefully wash the duck and remove the bones, then wipe dry and pound the meat until tender.
  2. Chop up about a tablespoonful of duck fat and fry it.
  3. Remove all lumps of fat, leaving only the clear oil.
  4. Put in the duck meat cut in small pieces and fry to a golden brown.
  5. Add one and one half tablespoonfuls of syou, a dash of cayenne pepper, and half a tablespoonful of salt.
  6. Cover and let simmer for twenty minutes while preparing the vegetables.
  7. Wash and soak the dried mushrooms for ten minutes, pulling off all stalks and cutting small.
  8. Cut up the bunch of celery small and add a cupful of small white onions.
  9. Slice the lotus seeds very thin and half a can of bamboo shoots.
  10. Put all prepared vegetables in with the duck and fry ten minutes.
  11. Add the bean sprouts and cook five minutes longer.
  12. Serve with rice.
