Water Chestnut Salad

Ingredients
- water chestnuts
- 2 tablespoons olive oil
- 1 onion
- 1 tablespoon vinegar
- 2 teaspoons syou
- 1 teaspoon salt
- 2 eggs
- 1/2 teaspoon sugar
- parsley
Instructions
- Peel and wash the water chestnuts, which are about the size of an ordinary chestnut.
- Slice them very thin.
- Make a dressing: to two tablespoonfuls of olive oil add the juice of one onion, one tablespoonful of fine vinegar, two teaspoonfuls of syou, one teaspoonful of salt, the yolks of two hard-boiled eggs crushed smooth, and half a teaspoonful of sugar.
- Mix all until smooth, then pour it over the water chestnuts.
- Sprinkle with chopped parsley.
