Water Chestnut Salad

Ingredients

Instructions

  1. Peel and wash the water chestnuts, which are about the size of an ordinary chestnut.
  2. Slice them very thin.
  3. Make a dressing: to two tablespoonfuls of olive oil add the juice of one onion, one tablespoonful of fine vinegar, two teaspoonfuls of syou, one teaspoonful of salt, the yolks of two hard-boiled eggs crushed smooth, and half a teaspoonful of sugar.
  4. Mix all until smooth, then pour it over the water chestnuts.
  5. Sprinkle with chopped parsley.
