Potatoe Soup

Ingredients
- 1 pound potatoes, fine
- 2 quarts water
- 1 pound meat trimmings
- 1 cup rice
- sweet herbs
- 1 head celery
- white pepper
- salt
- thickening
Instructions
- Grate the potatoes finely and place them in two quarts of water. Add the meat trimmings, rice, a few sweet herbs, and the head of celery. Stew well until the liquid is considerably reduced. Strain the soup through a sieve. If the strained soup is too thin and watery, add a little thickening. Season only with white pepper and salt.
