Instructions

  1. Simmer the young peas gently in water with mint, sugar, salt, and white pepper.
  2. When the peas are half done, throw in small dumplings made of paste as if for short crust and sweetened with a little brown sugar.
  3. Beat two eggs and drop in a spoonful at a time just before serving. Some prefer the eggs poached.
  4. Serve in a deep dish, as the liquor is not to be strained off.
