A Spring Dish

Ingredients
- 1 quart young peas
- mint
- sugar
- salt
- white pepper
- 1 pint water
- paste for dumplings
- 2 eggs
Instructions
- Simmer the young peas gently in water with mint, sugar, salt, and white pepper.
- When the peas are half done, throw in small dumplings made of paste as if for short crust and sweetened with a little brown sugar.
- Beat two eggs and drop in a spoonful at a time just before serving. Some prefer the eggs poached.
- Serve in a deep dish, as the liquor is not to be strained off.
