Fruit Tarts or Pies

Ingredients
- 0.5 pound sugar
- 1 quart fruit
- egg whites
- sugar
- pie crust
Instructions
- Stew acid fruits before putting them into the pie. Mix half a pound of sugar with a quart of fruit (use slightly less sugar if the fruit is very ripe). Lay the fruit high in the middle of the dish to give the pie a good shape.
- When the pie is nearly baked, whisk the whites of eggs with sugar to make an icing, lay this over the crust, and return the tart to the oven to finish baking.
