Endive

Ingredients
- water
- a tiny piece washing soda
- endive
- 1 tablespoonful olive oil
- 1 tablespoonful vinegar
- a dash cayenne
- 1/2 teaspoonful sugar
- 1 teaspoonful salt
- 1 clove garlic
Instructions
- Have water boiling hot and salted, then add a tiny piece of washing soda.
- Wash the endive and throw it into the boiling water.
- Boil the endive slowly for ten minutes.
- While the endive is boiling, take one tablespoonful of olive oil and heat it.
- Add one tablespoonful of vinegar, a dash of cayenne, half a teaspoonful of sugar, a teaspoonful of salt, and one clove of garlic chopped very fine to the hot oil.
- Let this mixture simmer for five minutes.
- Drain the water from the boiled endive.
- Pour the endive onto a serving dish and pour the hot vinaigrette over it.
- Serve.
