  1. Heat one tablespoonful of ham fat very hot.
  2. Chop up half a cupful of ham meat; slice thin half a dozen water chestnuts and half a small onion.
  3. Fry all together for five minutes.
  4. Beat six eggs, turn them into the pan, and scramble.
