  1. Half-boil a well-cleaned calf's head. Cut off all the meat in small square pieces and break the bones. Return the meat and bones to the stew-pan with good stock made of beef and veal.
  2. Dredge in flour and add the fried shalot, pepper, parsley, tarragon, a little mushroom ketchup, and a pint of white wine. Simmer gently until the meat is perfectly soft and tender.
  3. Shortly before serving, add balls of force-meat and egg-balls. The juice of a lemon is considered an improvement and may be added to finish.
