Extra White Chop Suey

Ingredients
- 1.5 lb chicken breast
- 1 tablespoon chicken fat
- 1 lb fresh white mushrooms
- 0.5 bunch celery
- 12 whole water chestnuts
- 2 whole white onions
- 0.5 can bamboo shoots
- 2 lb bean sprouts
- 1.5 teaspoon salt
- 2 tablespoon syou
- cayenne pepper
Instructions
- Cut the chicken breast into small pieces.
- Heat a tablespoonful of chicken fat in a deep frying pan until very hot.
- Add the chicken and fry until brown, stirring frequently to keep from burning.
- Add the prepared mushrooms (cut small), celery (chopped), water chestnuts (peeled and sliced), onions (sliced), and bamboo shoots (sliced) to the chicken.
- Cook for ten minutes.
- Add the bean sprouts, soy sauce, and a dash of cayenne pepper.
- Cook for another five minutes.
- Simmer for five minutes longer.
- Serve with rice.
