Casserole au Riz

Instructions

  1. Boil rice until quite tender. Mix the cooked rice with one egg and two tablespoons of strong gravy to form a firm paste.
  2. Line the inside of an oval, fluted casserole mould with this paste, making it thick enough to turn out without breaking. (Some cooks prefer to fill the mould entirely and then scoop away the centre instead of lining only.)
  3. Allow the rice to cool completely before turning it out of the mould.
  4. Fill the hollowed rice casserole with a fricassee of fowl and sweetbread in rich white sauce. Place in the oven until heated through and browned.
