A Nice Rice Pudding for Children

Ingredients
- 0.5 pound rice
- 1 quart fresh milk
- white sugar
- whole cinnamon
- lemon peel
- 1 bay leaf
- very little butter
- a little milk
Instructions
- Pick over the rice well and boil it in one quart of fresh milk until tender. Sweeten with white sugar and flavour with whole cinnamon, lemon peel, and a bay leaf. When the rice is tender, transfer it to a deep dish. Warm a very little butter in a little milk and pour over the rice. Bake until brown in a slow oven. The author notes that a slow oven is requisite unless the rice is extremely soft before it is put in the oven.
