Instructions

  1. Put gooseberries into a saucepan with very little water. When they are soft, pulp them through a sieve. Add several well-beaten egg yolks and sweeten with white sugar.
  2. Have ready a shape of biscuit ice (or any other cream ice preferred), molded in a round form. Carefully take off a thick slice from the top without breaking it, so that it may be replaced later.
  3. Scoop out a large portion of the ice from the hollow and mix it with the gooseberry cream. Fill the hollow with this mixture, cover with the piece of ice that was removed, and serve.
