Dry Tomato Soup

  1. Brown the onions in oil in a heavy pot over moderate heat. When hot, add the cut and peeled tomatoes. Season with cayenne pepper and salt, and simmer briefly. Cut the bread into thin slices and add to the tomatoes, stirring, until the mixture reaches the consistency of pudding. Beat the mixture well. Warm the egg yolks and butter together, then stir into the tomato mixture. Turn the entire mixture into a deep baking dish. Strew bread crumbs over the top and pour a little warmed butter over. Bake very brown in the oven.
