Instructions

  1. Mix a light batter with eggs, flour, and milk or water.
  2. For traditional pancakes: Heat butter or clarified suet until boiling in a dry, clean pan. Fry the batter until very lightly colored.
  3. For butter-free pancakes: Use a very dry and clean pan with no additional fat. Add extra eggs and a little cream to the batter to compensate for the richness. Fry until very lightly colored. These are noted as delicate and fashionable.
  4. For rice pancakes: Boil rice in milk until quite tender. Beat the cooked rice together with eggs and flavorings according to taste. Fry like ordinary pancakes.
