Miroton of Veal

Ingredients
- cold veal or poultry
- a little grated tongue or smoked beef
- a few crumbs of bread
- sweet herbs
- pepper
- salt
- parsley
- to taste essence of lemon
- 2–3 eggs
- a very small quantity good gravy
Instructions
- Mince the cold veal or poultry finely. Add the grated tongue or smoked beef, bread crumbs, sweet herbs, pepper, salt, and parsley. If desired, include essence of lemon. Mix all ingredients well with the eggs and a small quantity of good gravy until combined.
- Grease a mould and turn the mixture into it. Bake for three-quarters of an hour. Turn out with care and serve with mushroom sauce.
