  1. Cut the meat into proper shape. Beat the cutlets with a roller until the fibre of the meat is entirely broken—if this is not done, they will be hard. Cover them with beaten egg and sprinkle with flour, or spread a preparation for cutlets over them. Fry them in fat until a fine brown colour is achieved. Remove the cutlets to a hot dish.
  2. Add to the fat remaining in the pan a spoonful of flour, a small cup of gravy, salt, pepper, and a little lemon juice or lemon pickle. Pour this sauce over the cutlets and serve.
