Gâteau de Pomme

Ingredients
- 10 whole fine baking apples
- milk and water
- 0.5 ounce isinglass
- white sifted sugar
- lemon peel
- custard
Instructions
- Peel and core ten or twelve fine baking apples. Simmer them in milk and water until soft, then drain thoroughly.
- Beat the softened apples with a wooden fork until smooth. Combine with half an ounce of dissolved isinglass, white sifted sugar sufficient to sweeten, and grated lemon peel. Beat the mixture until perfectly smooth.
- Pour into a mould and set it in ice or a very cool place. When set and turned out, cover with a fine custard.
