Ingredients

Instructions

  1. Peel and core ten or twelve fine baking apples. Simmer them in milk and water until soft, then drain thoroughly.
  2. Beat the softened apples with a wooden fork until smooth. Combine with half an ounce of dissolved isinglass, white sifted sugar sufficient to sweeten, and grated lemon peel. Beat the mixture until perfectly smooth.
  3. Pour into a mould and set it in ice or a very cool place. When set and turned out, cover with a fine custard.
