Sweet and Pungent Chicken

Instructions

  1. Clean and singe the chicken, then remove all the bones.
  2. Lay the chicken in a stone dish.
  3. Pour enough boiling vinegar mixture (2 cupfuls vinegar, 1 dessert-spoonful salt, 2 tablespoonfuls sugar) over the chicken to cover well.
  4. Cover and put away in a cool place for twenty-four hours.
  5. Chop half an onion and fry it to light brown in sweet lard or chicken fat to prepare a brown gravy.
  6. Cut the chicken into quarters and put in a pan with 2 tablespoonfuls of syou.
  7. Simmer very gently for half an hour.
  8. Serve with rice.
