Sweet and Pungent Chicken

Ingredients
- 3.5 pounds young chicken
- 1 dessert-spoonful salt
- 2 tablespoonfuls sugar
- 2 cupfuls vinegar
- 0.5 onion onion
- 1 tablespoonful sweet lard
- 2 tablespoonfuls syou
Instructions
- Clean and singe the chicken, then remove all the bones.
- Lay the chicken in a stone dish.
- Pour enough boiling vinegar mixture (2 cupfuls vinegar, 1 dessert-spoonful salt, 2 tablespoonfuls sugar) over the chicken to cover well.
- Cover and put away in a cool place for twenty-four hours.
- Chop half an onion and fry it to light brown in sweet lard or chicken fat to prepare a brown gravy.
- Cut the chicken into quarters and put in a pan with 2 tablespoonfuls of syou.
- Simmer very gently for half an hour.
- Serve with rice.
