Lobster Omelette

Ingredients
- 1 teaspoonful peanut oil
- 2 eggs
- 1 tablespoonful cold water
- 1 tablespoonful lobster meat, cooked and chopped
- salt and pepper
Instructions
- Heat a tablespoonful of peanut oil in a small frying pan.
- Beat two eggs with a tablespoonful of cold water.
- Pour half the beaten eggs into the hot oil.
- Quickly add the remaining half of the beaten eggs and the chopped cooked lobster meat.
- Cook slowly for five minutes.
- Slip the omelette from the pan without breaking it.
- Repeat to make two or three more omelettes in the same manner, using either one pan sequentially or several small pans cooking simultaneously.
- Stack the finished omelettes on top of one another on a platter heated in hot water.
